Caol Ila is pronounced “Cull Eela”. It’s the Gaelic name for the Sound of Islay, which separates the island from Jura. For some, the distillery’s pronunciation is as remote as its location, sitting as it does on the rugged eastern coast, where it has remained hidden from view since 1846. However you say it, the fine, smoky whisky produced by generations of islanders is worth exploring.

1 of Bulleit Bourbon Frontier Whiskey -  Bulleit Bourbon is a Kentucky straight bourbon whiskey whose high-rye content and iconic frontier inspired bottle is a favourite among bartenders and mixologists across the world. When Tom Bulleit set out to make a bourbon unlike any other, he was inspired by a recipe created by his great-great-grandfather Augustus Bulleit more than 175 years ago. Crafted using pure limestone-filtered water and charred American oak barrels for all of the colour and some of the flavour, Bulleit is especially high in rye content, giving it a bold, spicy character with a distinctively smooth, clean finish.
1 of Talisker 10 Year Old -  Talisker 10 Year Old, the stalwart of the Talisker family, is a powerful single malt whisky, with a sea-salty nose, spicy complexity, smoky sweet character and signature peppery finish: like a warm welcome from a wild sea. This single malt has a famously rich and powerful peat-smoke flavour, while the finish leaves you with a warm peppery taste at the back of the mouth.It is double distilled to create a rich, deep character embodying the maritime characteristics of a coastal whisky, and then aged for a minimum of 10 years in American oak casks.

Nose Wonderfully concentrated and clean, peaty, medicinal, with rich fruit, spicy and fragrant.

Insights from some of the best in the business

The finish in question here is Muscatel casks and you can tell that from the start, as the nose is filled with a rich, sweet, and very pronounced dusky fruitiness — sloes and plums. The smoke as a result is diminished as are the grassy/bacony notes. While the smoke does emerge from its fruity bubble on the tongue, the effect is almost liqueur-like. It’s a very pleasing dram, but the question is, is it Caol Ila?

Touches of creamy smoke, along with walnut rinds, almonds and lemongrass make this a sensually appealing whisky on the nose. The palate is perfectly rounded: sugared, pine smoke; sour spring grass; grapefruit; and, nutmeg linger in the mouth. Then comes a finish that keeps working until, a minute after it’s gone, you get a bitter bite that caps the experience off right at the back of the throat. It’s lovely.
